Day 5 Five Favorite Foods

It’s easy to think of my favorite food: Ron’s Salmon!

Ron loves to grill for friends and family. When our kids are home they always request Dad’s Salmon. He grills it with lemon pepper and soy sauce. Ron says the key is to not overcook it. Ron’s salmon is always tender and delicious! I’ve tried to duplicate it, but can’t. He usually cooks asparagus on the grill and fresh green beans with garlic and olive oil to go with the salmon. So yummy! (If my son-in-law is here, we serve it with steak as well since Mark doesn’t eat fish.)

My second favorite is Ron’s Pork Tenderloin.

Ron sautes onions and mushrooms in his own secret sauce. He slices open the top of the tenderloin and places it in a large baking pan. He then puts baby potatoes and baby carrots in the pan around the meat and pours the onions and mushroom over it all, filling the cut-open tenderloin with deliciousness. He bakes it for 3-4 hours on low heat. We never need a knife to cut Ron’s Tenderloin. And we usually don’t have many leftovers. We serve it with fresh salad.

My third favorite food is Ron’s Lemon Chicken.

Are you noticing a theme here? My husband is a great cook and he clean ups after himself!

When Ron grills chicken, he uses the frozen skinless, boneless breasts from a big box store. He puts the meat right on the grill still frozen. He seasons it with lemon pepper, garlic salt, a bit of soy sauce and honey. It is sooooo good! We usually make potatoes with it. I cut lots of potatoes in cubes about half an inch and put in a 13 X 9 baking pan. Melt a couple of sticks of butter and stir in garlic salt, pepper, salt and parsley. Then pour the seasoned butter over the potatoes. Cook about an hour on 400. They are wonderful! The leftovers are great for breakfast if spread on a cookie sheet and broiled. And, no, these potatoes are not on my healthy eating list for this month!

My fourth favorite food is anything with Ron.

Over the past few years we have eaten at many restaurants as we traveled the country.Some good, some not so good. I am grateful that I get to eat dinner most nights with my love, even if dinner consists of a pizza delivered to the hotel because we are too tired to go out!

My fifth favorite food is anything eaten with good friends.

As I have written before, one of the best things about our travels theses past few years is getting to see friends all over the country. Living in a military town, we have had many friends come live here for only two or three years before the Air Force moves them to another state or country. Please s, we have lived in many different places and have friends from those areas. I also get to meet online friend in person on these trips. I am grateful to have the chance to meet up with many dear friends when we travel near where they live now. From Seattle, to Florida, to San Diego to Syracuse, and many place in between, we have dined with friends. I don’t remember if the food was always good, but I do know that it is always good to spend time with good friends.
