Hearty Wild Rice & Chicken Soup
On a winter day when I’m not feeling great, Hearty Wild Rice & Chicken Soup is exactly what I want to warm me up. I made a huge pot earlier this week and frozen some for later.
I cook this soup with fresh veggies and rotisserie chicken.
Shopping List:
Celery
Onion
Carrots
Cabbage
Chicken Stock
Wild Rice
Rotisserie Chicken
From the pantry:
Salt
Pepper
Garlic
Basil
Oregano
Thyme
Bay leaves
This soup is very easy to make! Chop half a large onion, 3-4 celery stalks, a handful of baby carrots, and half of a head of cabbage.
Pour two cartons of chicken broth into large soup pot. Add the veggies and bring to a boil.
Add seasonings. I’m not one to measure carefully. I throw a pinch of this and a bit of that in my soups. Stir in the seasonings then turn the heat to the lowest setting.
Add a cup or two of uncooked wild rice. Again, I don’t carefully measure; I throw in a handful or two. You may need to add some water to the pot. I added half the Rice from this package along with about four cups of water.
Put a lid on the pot and let it simmer.
Remove the bones and skin from your rotisserie chicken. Chop up the meat and add to the soup.
Let the soup simmer over lowest heat for an hour or two, stirring periodically. You may want to add more water if it gets too thick.
That’s it! You have a pot of yummy Hearty Wild Rice & Chicken Soup ready to serve.to

Your recipe looks very yummy. I haved pinned for future reference. I made chicken stock for the first time last year. Fairly straightforward, but took a while. The noodle soup was worth the effort. Not sure when I’ll attempt it again. Took a lot of my energy ‘spoons’.😊
