Jambalaya and Stuff
Rather than stocking up my pantry and fridge, I cleaned them out a bit. Here’s what we had for lunch. It was yummy!!
1 box Zataran’s Jambalaya
1 box uncle Ben’s wild rice
1 lb browned ground beef
1 lb smoked sausage
2 zucchini cut in small cubes and sautéed
4 stalks celery chopped
1 bunch green onions chopped
1 can tomato sauce
1 can Rotel mild
1 can chopped tomatoes
Cook rice as directed.
Throw everything in a pan. Simmer about 20-30 minutes until heated through.
To have a bit of crunch, add the celery, onions, and zucchini 10 minutes or so before serving.
You could also add other veggies like spinach, carrots, etc. or meats like chicken or shrimp. Whatever you have on hand.
I didn’t get a good picture, but here is a picture of the leftovers.
(I put leftovers in four lunch-sized containers so Ron and Julie have lunch ready this week! I’m also making a huge pot of chili! Yummy lunches for my housemates!)

You bring up a good point. I’m blessed to have a hubby who does our grocery shopping, but how many times do I add things to our grocery list without checking the pantry and freezer? Before we know it, we’re tossing freezer-burned meats and UFO’s (unidentifiable frozen objects) from the abyss of our overstuffed freezer, and tossing expired boxes and cans of this and that from the pantry.
Hmmm…wonder what I could whip up for supper tonight if I “shopped” my pantry?

I knew we needed some fresh items for the next few weeks. I also knew we didn’t have room for anything. So cleaned out the freezer and pantry. 😉

Every now then we have what my mom always called “clean the fridge stew.” It was always delicious, sometimes surprising, and the leftovers were better than the original 🙂
