One of my kids’ favorite meals was Tex-Mex Lasagna. It’s easy and fast to prepare plus it’s great reheated.
2 pounds extra lean ground beef
1 large onion, chopped
1 can Mild Rotel
1 can Original Rotel
4 cans Ranch Style Beans
Flour tortillas
2 pounds shredded cheese (I use Mexican blend)
Seasonings – garlic, salt, chili powder, cumin, pepper
In a large skillet, brown ground beef and onions. Drain. Add Rotel, beans, and spices. Stir.
Spoon some of the meat/bean mixture to a large casserole dish.

Tear tortillas into fourths. Layer onto meat/bean mixture.
Spoon more meat/bean mixture.
Add a layer of cheese.

Continue to layer – tortillas, meat/beans, cheese.
Bake for 45 minute at 350. Until cheese is melted.

Let sit for 5 minutes before serving.
Serve with chips, guacamole, and salsa. Yum!!
